Sprouting (or germination) is the natural process of waking up grains, pulses, and seeds using water and time something our ancestors have always done before cooking. As the seed begins to grow, natural enzymes are activated, making the food easier to digest and helping the body absorb minerals better.
At Dhatu, grains and pulses are carefully soaked, sprouted under controlled conditions, gently dried, and then processed never rushed. The result is food that feels lighter on the stomach and closer to how nature intended it to be eaten.
Lacto fermentation is an age-old method of preserving food using beneficial bacteria that naturally occur on vegetables and grains. These friendly bacteria convert natural sugars into lactic acid, which supports gut health and helps preserve food without chemicals. Traditionally used across cultures from Indian pickles to fermented porridges this process enhances flavour and digestibility.
At Dhatu, lacto fermentation is done slowly, in small batches, allowing time for nature to do its work, resulting in food that is alive, balanced, and gentle on the gut.

Traditionally, stone grinding achieved the same low-heat result. Activation is a simple traditional practice of soaking grains, nuts, and seeds in water and then drying them gently before use. Traditionally, nuts and seeds were stone-ground into pastes at home, retaining their natural oils and flavours.
